I also built a special version of Sider that has a different mechanism of hooking to the game, but it is easier to use on Steam Deck:

if i'm not mistaken @closerer was using Virtual Red patch.
But it doesn't matter really, you can use any patch with sider.
 
So, i can't give you step-by-step instructions, because i don't actually have a Steam Deck.
How familiar are you with things like Desktop mode, running games via Proton, and so for? You'll need to know/learn this in order to be able to configure PES with VirtualRed patch..
