How do i make AI vs AI games fun and interesting to watch?

I'm working on a Youtube series where i simulate games in PES 2021 but most of the simulated games end up in boring results like 0-0 and 1-0. I really wanted the AI to score more goals against the other AI, so i change the difficulty to Amateur and in the Amateur difficulty the AI does score more and it feels more unpredictable but at the same time the AI is sorta dumb which annoys me. I really need to find a way to make the AI score more and be smart at the same time. Can anyone help me?
